ADD SOME PRODUCTSIf you'd like, you can use vegetable broth for more flavour. You can also add tomato paste (or diced tomatoes) if you prefer. If you reduce the liquid slightly and add some coconut milk, you'll have a wonderful creamy texture for serving over rice.
Serves 4-6.
Ingredients: lentils, split peas, coconut, dehydrated mixed vegetables (carrot, onion, celery, leek, tomato, red and green bell peppers, cabbage), candied ginger, vegan chicken-style soup base (salt, dextrose, maltodextrin, onion powder, carrot powder, autolyzed yeast extract, spice, natural flavouring, turmeric), onion, turmeric, cumin, cinnamon, dried coriander, cardamom, cayenne pepper.
Prep instructions: Add 6 cups of water or vegetable broth to packet contents. Bring to boil, then turn down the heat to low and cover and let the soup simmer until peas and lentils are very tender. Stir in 2 tablespoons tomato paste if desired. Cook a little longer until desired temperature and consistency is reached. You may add more water or coconut milk if necessary, or a can of tomatoes to make it more soup-like. Garnish with a dollop of yoghurt if desired.
