Squash, Pie Pumpkin

Also known as sugar pumpkins, these taste much better than a carving pumpkin! Click on photo above to see cooking suggestions (puree for baked goods, savoury dishes, etc).
Make puree for baked goods, soups, pasta dishes, and more:
Halve, scoop out seeds, and roast cut-side-down at 375*F for 45-60 minutes until completely tender, then scoop out and puree the flesh for use in baked goods, soups, pasta sauces, and more. Puree can be frozen for later use.
Roasted pieces for side dishes:
Cut in half, scoop out seeds, peel away tough outer skin, cut into cubes or wedges, toss with oil and seasoning, and roast at 400*F until tender and caramelized.
Add to soups and stews:
Follow above steps, but toss small raw cubes directly into curries, chilis, and stews where they can simmer and soften just like butternut squash or sweet potato.
