Yuzu Shio Ramen Kit

Make refreshing, "everyday" ramen in minutes (serves one generously).

Includes one portion of broth seasoned with a blend of sea salts and real yuzu (citrus) juice, and one portion of medium-thick, medium-firm Tokyo-style noodles.

130g Tokyo-style noodles
330mL soup broth

Broth Ingredients: water, chicken, fish extract, kelp extract, sea salt, salt, soy sauce (water, soybeans, wheat, salt), sugar, extracts (yuzu, garlic, green onion), rice vinegar, chicken fat, canola oil, ethanol, rice, koji (aspergillus oryzae).
Noodle Ingredients: wheat flour, water, sea salt, kansui (sodium carbonate, potassium carbonate), corn starch.
Allergens: wheat, soy, fish.  May contain trace amounts of: sesame, milk, mushrooms, shellfish, egg, alcohol

1) THAW - in fridge for up to two weeks, or by placing both the stock and the noodle bags into very hot tap water for 15 minutes (it's particularly important to get the noodles thawed so they will separate when boiling, as a frozen centre will stay clumped in the short 30 second boiling time).

2) HEAT BROTH - Pour broth into pot and heat to just under boiling. Pour hot soup into large bowl and cover with a plate to keep hot.

3) BOIL NOODLES - Bring 2 litres of water to a rolling boil in pot. Remove noodles from bag and gently loosen noodle bundle with hands. Add noodles to pot and boil for 30 seconds while gently stirring, or until desired tenderness (they will continue to soften a little when added to the hot broth). Drain well, then add to soup bowl and arrange noodles neatly.

4) TOP - Optional! Add your choice of toppings or garnishes: i.e. pork chashu (marinated braised pork belly), sliced green onion, pickled ginger, sesame seeds, kimchi, wood ear mushrooms, soft boiled egg, microgreens, or anything that sounds good to you.

5) EAT - slurping loudly!
