Hakata Tonkotsu Ramen Kit

This is our highly authentic Hakata-style Tonkotsu (emulsified pork bone broth) ramen. Silky white soup with thin and snappy noodles. Top with with pork chashu, green onions, or try kimchi - one of our favorite combinations!

Kit serves one, generously. 

Includes:
130g #26 Hakata-style noodle
330mL Tonkotsu soup stock (cloudy pork bone broth) seasoned with Shoyu Gyokai Tare (soy sauce with fresh BC shellfish).

Stock Ingredients: water, pork bones, pork. 
Noodle Ingredients: wheat flour, water, egg white, kansui (potassium carbonate, sodium carbonate), corn starch.
Seasoning Ingredients: soy sauce (water, soybeans, wheat), water, rice, sea salt, koji (aspergillus oryzae), clam, oyster, seaweed, mushroom, fish sauce. May contain trace amounts of alcohol.
Allergens: wheat, egg, pork, shellfish

Directions:
1) THAW - in fridge for up to two weeks, or by placing both the stock and the noodle bags into very hot tap water for 15 minutes (it's particularly important to get the noodles thawed so they will separate when boiling, as a frozen centre will stay clumped in the short 15-30 second boiling time).

2) HEAT SOUP - Pour soup into pot and heat to just under boiling. Pour hot soup into large bowl and cover with a plate to keep hot.

3) BOIL NOODLES - Bring water to boil in pot. Remove noodles from bag and gently loosen noodle bundle with hands. Add noodles to pot and boil for 15 seconds while gently stirring, or until desired tenderness (they will continue to soften a little when added to the hot broth). Drain well, then add to soup bowl. Gently stir to combine.

4) TOP - Optional! Add your choice of toppings or garnishes: i.e. pork chashu (marinated braised pork belly), sliced green onion, pickled ginger, sesame seeds, kimchi, wood ear mushrooms, soft boiled egg, microgreens, or anything that sounds good to you.
