Chicken, Bacon, and Mushroom Terrine


Made with Island Farmhouse Poultry chicken thighs, pork shoulder, bacon, sautéed mushrooms, parsley and brandy, this terrine pairs well with an aged cheese, some crunchy pickles and baguette.

A lovely addition to a cheese board, or enjoyed on its own with a salad and a glass of wine.

125g portion, vacuum sealed. Enjoy within three days of opening.

Ingredients: chicken thigh, pork shoulder, pork fat, chicken breast, mushrooms, onions, parsley, eggs, cream, brandy, kosher salt, ground ginger, mustard powder, pepper, curing salt.

Note: produced in a kitchen that uses nuts, and processes value-added fish products.

Food has always been an essential part of family life for Chef and Owner of Pickles' Pantry, Louise Pickles. After studying History at the University of Victoria, Louise decided to make her passion for food and cooking her occupation and attended cooking school at the Pacific Institute of Culinary Arts in 2003. Since then, Louise's career has taken her around the world and back again as she has worked in and led some of the best kitchens in Vancouver, Australia, and Vancouver Island.

After taking a quick break to start a family, Louise and her husband moved to Cobble Hill in 2018 and look forward to raising their two children here and growing Pickles' Pantry into a thriving Island business. Pickles' Pantry adds a modern twist to traditional and rustic French Charcuterie such as Pâtés and Terrines, and combines them alongside other Island products in carefully curated Grazing Boxes.
