Chicken, Bacon, and Mushroom Terrine


Made with Island Farmhouse Poultry chicken thighs, pork shoulder, bacon, sautéed mushrooms, parsley and brandy, this terrine pairs well with an aged cheese, some crunchy pickles and baguette.

A lovely addition to a cheese board, or enjoyed on its own with a salad and a glass of wine.

125g portion, vacuum sealed. Consume within three days of opening.

Ingredients: chicken thigh, pork shoulder, pork fat, chicken breast, mushrooms, onions, parsley, eggs, cream, brandy, kosher salt, ground ginger, mustard powder, pepper, curing salt.

Note: produced in a kitchen that uses nuts, and processes value-added fish products.

Pickles' Pantry is a one woman show, owned and operated by Chef Louise Pickles. With over 15 years experience in the food industry, Louise has worked in kitchens of all shapes and sizes, from Relais and Chateau Resorts in B.C., to vegan surfing retreats in Western Australia. Having moved to Cobble Hill in 2018 with her husband and two children, Louise looks forward to sharing her talents and delicious food with the Cowichan Valley.

One of the goals of Pickles' Pantry is to provide a wholesome and delicious product made with real quality ingredients. Where possible, we hope to source those ingredients from Vancouver Island producers such as Island Farmhouse Poultry, Lockwood Farms and Hertel's Meats.
