Hand-picked, warm-air cured Laminaria setchellii from the clean, cold waters of Vancouver Island's west coast (Barkley Sound, Bamfield).

Kombu (with a thick blade and jerky-like texture) is used in many traditional Japanese dishes. Simmer in soups, stews, and casseroles for umami flavour enhancement.
